Recipe: Spring Vegetable Aspic
Serves four/Prep 30 minutes/Cook 20 minutes/Chill 2 hours
Ingredients 1 00 g cauliflower/100 g green beans/one tablespoon chopped parsley/one teaspoon of chopped chives/half a sachet of jelly or Madeira/four radishes/four large pink prawns/the one/pepper.
1-Wash and peel the vegetables. Cut the carrots into thin sticks and divide the cauliflower into florets. Steam the vegetables, making sure they remain crisp. Season with salt and pepper, and mix with the parsley and chives.
2- Heat the Madeira jelly with 20 centilitres of water. Cut the radishes into slices. . Peel them shrimp.
3-AAt the bottom of four ramekins, arrange the radish slices and shrimp. Pour in the jelly. Chill for at least two hours.
