Cupcakes with dulce de leche, condensed milk and speculoos powder

Here's a dessert that will delight even the most discerning sweet tooth! Every element is deliciously decadent… Dulce de leche, sweetened condensed milk, speculoos powder, all layered atop a wonderfully moist cake! If you're not making the dulce de leche yourself and you're buying it, it can sometimes be a little thick. In that case, simply microwave it for 20 seconds and stir it well. It will then have the perfect consistency for decorating cupcakes.

INGREDIENTS (for 10 cupcakes):

1.5 cups flour
2 teaspoons of yeast
1/2 cup softened butter
1 cup of sugar
1/2 cup milk
2 eggs

For the topping
1/3 jar of dulce de leche
20cl of crème fraîche
100g mascarpone
30g of butter
300g (approximately) icing sugar
2-3 speculoos cookies, reduced to powder
1 teaspoon of vanilla extract

PREPARATION:

Preheat the oven to 180°C
Line a muffin tin with paper baking cups.

In a small bowl, mix the flour, yeast and salt.

In a bowl, beat the butter and sugar.

Add the eggs one at a time and continue beating. Add the vanilla extract.

Add the milk and flour mixture alternately. Mix well.

Pour into the paper cases up to 2/3 full. Bake for 20-25 minutes (check cooking by pricking with a knife; the blade should come out dry).

Remove from oven and let cool on a wire rack.

PREPARATION OF THE CREAM:

Beat the butter and mascarpone.
In a separate bowl, beat the cream until it thickens. Add the butter-mascarpone mixture.
Continue beating, gradually adding the icing sugar. Approximately 300g, but taste regularly to decide how sweet you like it.

When the cupcakes are cool, spread them with dulce de leche.
Then add a generous dose of sweetened condensed milk.
Using a fork, place lines of dulce de leche.
Finish with speculoos powder.
