Cod and candied peppers

Here comes spring and for good se préparer à l’été rien de tel que des bons petits plats qui ne sont pas trop caloriques! An idea for a slimming dish is this recipe from Portugal and presents us with a dish of Cod and candied peppers, je ne l’ai pas encore testé mais je n’y manquerai pas! Ce plat minceur pour 4 personnes, apporte uniquement 220 calories par personne. Il se prépare en 15 minutes et il faut compter 40 minutes pour la cuisson.

bell pepperINGREDIENTS
600 g salted cod
3 beautiful yellow or red peppers
4 gousses d’ail
16 cherry tomatoes
Le jus d’1 orange
1 tbsp balsamic vinegar
1 c. à soupe d’huile d’olive
piment d’Espelette

PREPARATION

1. Place the cod in a colander, skin side down, if any, towards you. Place the cod in a large bowl and cover with water. Change the water regularly.

2. Wash, hull and seed the peppers. Cut them into strips. Wash the cherry tomatoes.

3. Heat the oil in a frying pan, add the peppers.

4. Let them brown for 3 minutes, then pour in the vinegar and orange juice. Add the cherry tomatoes and unpeeled garlic cloves. Add a little salt and pepper to taste. Let the peppers simmer for 30 minutes over low heat.

5. Dry the desalted cod in a cloth and place it on top of the peppers. Cover and continue cooking for 10 minutes.
